
(Original recipe taken from Taste of Home Simple and Delicious magazine)
Ingredients:
3 cups of all purpose flour
1 tsp of salt
1 tsp of baking soda
1 tsp of baking powder
1 tsp of ground cinnamon
1.5 tsp of pumpkin spice
3 eggs
2 cups of canned pumpkin
1 cup of canola oil
2/3 cup of sugar
2/3 cup of packed brown sugar
3 tsp of vanilla extract
1 cup of raisins
Method:
In a large bowl, combine the flour, salt, baking soda, baking powder and spices. In another bowl combine the eggs, pumpkin, oil, sugars and vanilla; stir into dry ingredients just until moistened. Fold in raisins.
Pour into 2 greased 8×4 loaf pans (I used 9×5 – it’s what I had) Bake 350 degrees for 50-55 min or until a toothpick inserted comes out clean.
Cool for 10 min before removing from pans to wire racks.

Slice one loaf into individual servings and freeze.
